Healthy Buffalo Cauliflower Bites

Some days you eat salads and go to the gym, some days you eat a cupcake and refuse to put on pants.. It’s called balance.

With football season upon us it’s hard to wanna eat healthy when all you want is beer and some wings. This past weekend a couple of my friends and I got together to watch some games. Of course there was cheese dip, pigs in a blanket, and lots of other yummy things (that are not quite as healthy for you). But you’re allowed to have those days. To balance out of some of the other food I decided to make buffalo cauliflower bites. This helps my wings craving and is healthy for you.

Healthy Buffalo Cauliflower Bites

Total Time: 25 minutes

6 cups of fresh cauliflower florets

2 teaspoons garlic powder

a pinch of salt

a pinch of pepper

1 tablespoon Coconut Oil, melted **

¾ cup Frank’s RedHot hot sauce

** Original recipe called for butter, but I don’t use that in any of my cooking. So do with that what you will.

  1. Preheat oven to 450 degrees and place cauliflower on a baking sheet and spray with  olive oil or drizzle olive oil over the cauliflower and toss.
  2. Mix together the garlic powder, salt, pepper, melted coconut oil, and hot sauce in a small bowl.
  3. Add the cauliflower into a large gallon-sized bag, pour the buffalo sauce into the bag. Shake until the cauliflower florets are fully coated. Spread onto a baking sheet.
  4. Bake for 20 minutes.

You can serve with ranch or blue cheese if you choose.
